Before jumping onto Ubuntu, .. I would strongly suggest going with Debian.
No risk of abandoned forks <g>!

Also, Jitsi runs well on unstable, .. easily handing 15-20 folks on a 4x4
VPS. Only issue seems to be that folks using Firefox tend to hog bandwidth
as FF is not yet setup to negotiate a less-than-full bandwidth video
connection.
