Audacity is probably the most intuitive - there's some other programs, 
like KRecord, that are smaller and simpler (Audacity has a billion 
features you won't use) but Audacity is easy to setup, easy to make sure

it's working, and will allow you to export your recording to a CD-ready 
.wav file.
