Setting up RAID 1 via Disk Utility is destructive to the existing data
on the drives. There may be third-party ways to do it, but with Disk
Utility, it'll want clean drives.
And as a side, I use two 250GB drives in a RAID 1 for my backup
storage and I've been happy as a clam with the solution (I backup with
Retrospect to said RAID, so I never directly delete anything from it).
My only problem is that I'm running out of space...
