This is a pretty popular scenario. People create “carputers” for car entertainment systems. If you Google “carputer” you can find a lot of options, including kits and complete computers.
Probably the easiest, and one of the most affordable options is to use a laptop. Pick a model that was very common, for example Dell Latitude 14” or IBM Thinkpad, you can get them for about $100 used and there are lots of add ons available. The Dell Latitude D630 goes for $75-100 and has a “slim power supply” available for about $30 that has a 12v port on it. If you don’t need the built in screen, you can probably pick up a cracked screen model even cheaper.
