A /64 is the "standard" size for a single IPv6 subnet, in that the normal
IPv6 autoconfig mechanisms expect that size and probably don't work without
it.  If you're willing to set up a DHCPv6 server or manually configure IPv6
addresses you should be able to subnet that /64 quite a bit if you really
need to.

That aside, I generally like Ubiquity equipment (I've got some installed at
home and for one location at work).  I've not used the Edgerouter though.
I think that their sweet spot are high-end home users (like me) or small
offices that want enterprise-y features without paying through the nose.
