TrueCrypt can be used to protect Windows pre-boot (requires password to
decrypt the drive, then boots to OS). TrueCrypt doesn't support that mode
for Mac or Linux, though.

I've set up my wife's laptop to boot off a TrueCrypt volume into windows.
For Linux, I'm using the built-in (to most distros) LUKS encryption method.
