The do not wish to spend the budget for a "legal" archiving system, 
.. but, FYI, it looks like imapsync is going to do the trick:

 > Email clients are set to never delete email on the server [required]
 > Use imapsync to pull any new email from the hosted email every night
 > Rsync nightly to append new emails to the 'archive' (NAS box)
 > On Saturday, a delete job purges deleted emails on the host over 30 days old

We're doing test runs right now and will be sync'ing to the local 
server this week.
