Matt,
I know. However, there are a couple of real world factors here.
1) My data usage varies greatly depending on my particular projects. One month might be 100M, one might be 5Gb. Generally if you don't egregiously abuse "unlimited", you can point to past usage and sweet talk your way into dropping charges.
2) If a plan says "unlimited", you can generally make a big enough fuss to have charges dropped or to let you out of a long-term contract. If you are unpleasant enough in a store... after attempting the "being kind" approach, of course, the CSRs can often do magic things to your account to make you leave happy enough. It's a bit of a nuclear option, I know, but there you are.
Personally, since I sign a two year contract to get the service, I think it'd be nice if the limits were based on the two year period and not monthly. I think that over longer-term time scales, my minute and bandwidth usage might better fit a particular plan. But again, I may be unusual in this regard.

Josh - hate to burst your bubble, but there isn't any "Unlimited" data that
I know of. All of the carriers sell "unlimited" data, but I don't think any
of them actually allow it. I think if you hit a certain limit, you will
start getting charged.

to get an Evo. ;)
More seriously, due to the nature of my job, I need unlimited data. Others
might not be in the same boat.

If anyone is interested in the stats so far, the average minute usage per
phone is 350, average texts per phone is 360, and the average data usage per
phone is 291 megs. If you exclude the non data users, the average usage per
phone is 621 megs per month. The average cost per telephone is $45.
If we offered something in the range of 500 minutes, 500 text, and 500 megs
for $50 and 1000 minutes, 1000 text, and 1000 megs for $75, would that be
appealing?
