I don't remember seeing it on the desktop but on the last screen
before it starts installing there's an option for advanced settings.
Maybe try there.
One other possibility is when the install is done, switch to a vt and
remount the filesystem and install packages that way.
Another option is to use the alternate installation CD (the text
installer) which will let you back out to the traditional debian
installer where you can do whatever you like.
