It's bad form to reply to myself, but I should mention that I'm using nx through the company VPN. It uses very little bandwidth.

Yep. I've run into this one on Debian as well. "sudo apt-get install openssh-server" will fix it.
Also, for remote access, I've been using nx from www.nomachine.com. It runs over SSH, so that's the only port you need to open, and will still let you use your shell from a traditional ssh client. It's much less messy than trying to build your own VNC over SSH solution, and has clients for Windows as well.

You have to install it on Ubuntu. Its not part of the initial CD install packages.

"netstat -atunp | grep LISTEN" will tell you what's listening now.
"chkconfig --list" will tell what's set to autostart... but may need to be installed manually on Ubuntu.
Or you can dig around in the init.d and rc.d directories, if you're really into symbolic links.

Is there any way to make sure SSH is installed and running after installing ubuntu from CD? Or Remote Desktop/VNC? I've done remote installs before without realizing that even if these were installed and turned on on the live cd they won't be after the reboot into the installed OS.
