The WikiMatrix Wizard http://www.wikimatrix.org/wizard.php is useful to 
find a wiki that matches your needs.

You are probably looking for something you can install on your own 
server but if you don't mind a hosted wiki then you should check out 
PBwiki http://www.pbwiki.com It has a WYSIWYG editor mode.
