Sean,
If all you are looking for is a file server, one of the "turn key"
distros may work out better. Unless, of course, you think there will be
service growth on the server.
If not, you may want to check into FreeNAS and/or Openfiler.
Personally, I use openfiler. But that's largely personal preference.
