Order of speed:
eSATA (I think, but you'd need a card I believe)
FW800
Gigabit Ethernet (technically it tops out higher than FW800 but
you'll need a gigabit hub/switch, and there's other traffic there).
FW400
USB2 which is technically 480mb/sec, but has overhead problems and
cannot sustain throughput like FW400
100mb Ethernet (or gigabit w/ a 100mb switch)
USB1.1 (or USB2 if you have a USB1.1 hub)
I believe this is about the order I'd go for a storage device, though
depending on it's role, maybe want to move the network based tech's
lower - you'll get better throughput w/o other network traffic
getting in the way.
please correct me if I'm wrong anyone, but I believe this is the order.
