OSX _technically_ does not run on pre powermac G3 hardware.
However, there is the ability to run it on these machines using
XPostFacto.

You have to deal with the slower bus of a 7600 and lack of
accelerated graphics, unless you want to upgrade your video card too,
which is difficult, as the cards that XPostFacto supports are long-
discontinued.
I would strongly suggest just spending the money for some minis, if
the nonprofit can afford it, as they are going to be much faster and
more stable at what you want to do.
