When you say die, do you mean goes into a clicking frenzy and then stops working? If it's dead, as in no rotation of the platters, you won't get anything off of it. I'll assume you mean it still spins up when you say 'die', and use that meaning in here.
I've used a utility called http://fadingred.org/senuti/ in that situation. Often if you reboot the ipod often enough, the hard drive comes to life long enough to do some copying. When mine died, twice (original and replacement), I rebooted over and over until the ipod booted up, and then transferred data off.
