I will also weigh in on the side of Audacity.  Very solid little audio
program.  Many folks record podcasts with it.  It is also
cross-platform.  I know there is a version for Windows and I think
there is one for Mac, too.

(and no, Josh, I don't want to give a lightning talk on Audacity)  ;)
